Chef In The Classroom
Chef in the Classroom is a program where students are given the opportunity to work side by side with a professional chef and create a dish featuring a locally grown vegetable. Using the New York State Pride from Apples to Zucchini harvest guide that lists all the vegetables that are available during a particular month, students vote on a vegetable. The chef then visits the classroom bringing in a “mobile” kitchen, and with the students’ participation, they create an original dish featuring the vegetable the students had chosen. The students get to sample their dish, then name it. The following week it is served in the cafeteria for all the students in the school to try as a "Farmer's Choice" menu item.


Fresh From The Farm

Through the Fresh From the Farm program, schools may procure fresh local foods for use in their cafeterias. Schools establish a partnership with Hudson Valley farmers, serving students the freshest food while teaching them where it comes from.
